The Person

This role really has the potential for you to develop the food concept of award-winning outlets to add an innovative twist to the Cambridge dining scene. The Role

As Sous Chef you will be responsible for planning and directing food preparation in kitchens, and be reporting directly to the Head Chef. You will help create memorable experiences for guests, whenever and wherever they dine. You will also ensure quality, kitchen maintenance and inventory functions kept to high standards - to make sure your kitchen is always running smoothly.

Key responsibilities

As Sous Chef, you will:

  • Plan and direct all the hotel food operations including, but not limited to, The Folio Bar & Kitchen, Sage of Cambridge, and Room Service Operations together with the Head Chef.
  • Lead the kitchen’s team in absence of the Head Chef.
  • Assist the Head Chef to produce diversified menus in accordance with the restaurant’s policy and vision with focus on British classics, vegan and vegetarian specialties
  • Ensure quality and consistency in food preparation and presentation is followed by the team
  • Be hands on the preparation of dishes, management of the pass, monitoring of quality
  • Evaluate Guest satisfaction levels and monitor trends with a focus on continuous improvement.
  • Assist the Head Chef to operate within departmental budgets through effective stock and cost controls and well managed schedules.
  • Ensure a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
  • Train team members to have an up-to-date knowledge of all food menus as well as hotel facilities and current offerings.
  • Ensure staffing levels appropriately cover business demands.
  • Plan and manage the day-to-day operation of all areas in relation to staff productivity, facilities, equipment, food standards and sales through effective communication and delegation.
  • Control on an on-going basis - Quality and presentation of food items; keeping the standards set; portion control and operating costs; staff behaviour and hygiene practices; cleanliness of the kitchens meet Food Hygiene legislation and the principles of H.A.C.C.P. (Hazard Analysis of Critical Control Points)
  • Check effective controls are in place i.e. stock rotation, stock holding, food wastage, portion control etc. to ensure food gross profit (GP%) is achieved on a monthly basis.
  • Deliver the product to expected Brand standards and manage the QE process.

Core requirements:

  • UK citizen or valid work permit
  • Proficient numeracy and literacy skill
  • Hands-on attitude
  • At least two years in a supervisory capacity with culinary/kitchen operations experience
  • Proven ability to manage a kitchen team, plan menus, manage stock and costs effectively
  • In-depth knowledge of UK Food Hygiene and Health & Safety Laws
